Tim Carter talks about the correct tool to use - an optical builders level / transit - to get the wood 6 x 6 posts perfectly level.
It's very hard to get the concrete piers level when you're looking for a maximum margin of error of no more than 1/8 inch. It's easy to get the wood posts within that margin of error using the optical level.
